概要 This study aims at discussing the developmental of Japanese manaita, or chopping boards, through changes in their functions, forms, and materials. After examining the literature, pictorial materials a...nd field survey results, following findings are disclosed: 1) Manaita of our country had their roots in Chinese zu (俎),four-leg chopping and religious boards, but in the medieval age wooden chopping boards with legs were developed to form the Japanese manaita culture in an attempt to protect sharp-edged cutlery. 2) Due to gradual changes in the cooking posture to standing one instead of sitting on the floor from the late Meiji era (the 1900s), household cooking practice with the standing posture became more common in the early Showa era, obsoleting manaita with legs. After the 40s of the Showa era, or the 1970s, stainless kitchen sinks drove out manaita with legs from the kitchen. 3) Plastic manaita appeared in the late 30s of Showa era (the 1960s) have penetrated widely in the Japanese households because of their easy-care. National and local authorities also recommended them as sanitary. 4) After the 40s of the Showa (the 1970s) era the use of wooden manaita has become lesser and lesser because users find difficulties in maintaining their surfaces clean and scratchless. The Japanese culture using the sharp-adged cutlery and softwood manaita seems to fade away year after year.続きを見る
