A combined method with Impact-Cell-Mill and a chemical treatment was used for the making of protein preparation from Baker's yeast. On the operation, the condition of Impact-Cell-Mill were controlled as follows: a) the spouting pressure was adjusted at 600 kg/cm^2 b) the clearance from nozzle to disk was taken 30 mm c) the concentration of yeast suspension was 7.76% (at dry basis). And following results were obtained: Raw yeasts that was treated with 0.1-0.2% of sodium hydroxide were destructed very easily by Impact-Cell-Mill and the obtained yeast protein was almost no coloured with the treatment. 0.1-0.2% NaOH treatment was more suitable for protein extraction than 0.3-0.5% NaOH treatment. By the treatment, about 70% protein content samples were obtained from Baker's yeast and the protein recovery was about 94%. According to this result, the authors concluded that the method is a vailable for the production of protein from single cell in large scale continuously.
