自家製味噌および味噌桶の使用率低下と復活の可能性 : 福島県でのアンケート調査を通して

概要 Self-sufficient living in farming villages has been declining gradually since mid-1950s when the rapid economic growth started in Japan. The use of home-made miso has sharply decreased after 1970 due ...to the increased number of part-time farmers with resulting more incomes from other than farming, and because of commercial miso easily available in stores. Questionnaires were performed in 1991 and 2006 in the Fukushima prefecture on the use of home-made miso and miso-oke barrels. The results showed a decrease from 3 7% to 21 % in the use of home-made miso, and miso-oke barrels remained around 5%. Major reasons of declined home-made miso are commercial miso which is available widely and inexpensively, while home-made miso making is time-consuming. Younger generations should not necessarily avoid home-made miso. As they are highly safety-conscious in food, it would not be impossible to revive home-made miso if opportunities and grounds for it are provided by local authorities and education continuously.続きを見る
