1. In this investigation, certain physical and chemical examinations were carried out on 5 brands of home-made powders and 13 brands of foreign-made (including 3 brands of malted milks). 2. The color of milk powders varies from a white color or a yellow-white to a pale brown-yellow-white; a yellow-white was the color of the largest number. 3. The solubility tests show that the spray-process powders are more soluble than the drum-process powders. 4. The results obtained by using a water-oven drying at 100℃. are similar to that of the xylene-distillation method, and consequently the lactose was found to be present in the dry milk as in the anhydride form. 5. From the results obtained by studying the stained powder grains under microscope, may be deduced the manufacturing process of its powder.
