紫外線およびエセフォンが紫色アスパラガスの若茎の着色に及ぼす影響について調べた．若茎のアントシアニン蓄積量および着色は紫外線除去により著しく低下した．紫色アスパラガスでは若茎の着色が不良であると商品価値が下がるため，紫外線量を減少させないような栽培をおこなうことが望ましい．一方，エセフォン処理により有意に若茎のアントシアニン蓄積量は増加した．
Effects of ultraviolet (UV) ...light elimination and ethephon on coloration of young spears of a purple asparagus ‘Burgundy' were investigated. Coloration and anthocyanin accumulation were inhibited under UV light eliminating conditions. As defective coloration of purple asparagus spears reduces their commercial value, it is preferable to grow without decreasing the amount of UV. Ethephon treatment accelerated coloration and anthocyanin accumulation of the spears.続きを見る
